Sharing our fabulous rib-eye steak recipe

Aged rib-eye is where simple technique = huge payoff.

Here’s a no-fail method with both cast-iron and braai options, plus a quick sauce and a fancy finishing butter.

The Fabulous Aged Rib-Eye

What you need (serves 2)

  • 2 aged rib-eye steaks, 4–5 cm thick (350–450 g each), bone-in or boneless

  • 2 tsp flaky salt (or 1½ tsp fine salt)

  • Freshly ground black pepper

  • 1–2 Tbsp high-smoke-point oil (canola/avocado)

  • 60 g butter

  • 3 garlic cloves, lightly crushed

  • 2–3 sprigs thyme or rosemary

Optional: Anchovy-Herb Butter (game-changer)

Mash 60 g soft butter + 2 oil-packed anchovy fillets (minced) + 1 tsp lemon zest + 1 Tbsp chopped parsley. Roll in baking paper, chill.

 

Step 1: Dry-brine (earlier is better)

Pat steaks very dry. Salt all over (and edges). Refrigerate uncovered on a rack 6–24 hrs.
No time? Salt at least 40 min before cooking or right before.

 

Cast-Iron, Butter-Baste Method

  1. Temper: Pull steaks out 45–60 min before cooking. Pepper generously.

  2. Preheat: Heat a heavy pan until ripping hot (a wisp of smoke). Add oil.

  3. Sear: Lay steaks in; don’t move for 2 min. Flip; sear 2 min.

  4. Baste: Drop in butter, garlic, herbs. Tilt pan and spoon foaming butter over the steaks 1–2 min per side.

  5. Finish: For thick cuts, lower heat to medium and continue flipping/basting until target temp (below).

  6. Rest: Move to a warm plate, pour butter over, rest 7–10 min.

Braai (Sear-then-Indirect) Method

  1. Fire: Get coals/wood to a hot, even bed (you want high direct heat and a cooler zone).

  2. Sear: Brush steaks with oil. Sear directly over high heat 2–3 min per side to get deep colour.

  3. Finish indirect: Move to cooler side, lid on, vents open, until target temp.

  4. Rest: 7–10 min.

Target internal temps (pull a few degrees early for carryover)

  • Rare: pull 49–50 °C (final 51–52 °C)

  • Med-rare: pull 53–54 °C (final 55–57 °C) ← sweet spot for aged beef

  • Medium: pull 58–59 °C (final 60–63 °C)

Tip: Dry-aged steaks cook a touch faster—check temperature sooner than you think.

 

Quick Pan Sauce (while steak rests)

  1. Pour off excess fat, keep about 1 Tbsp in pan with the garlicky bits.

  2. Splash in 60 ml brandy or dry red; simmer and scrape brown bits.

  3. Add 120 ml beef stock; reduce by half.

  4. Whisk in 1 Tbsp cold butter and a crack of pepper. Taste for salt.

Serve it like a pro

  • Slice off the bone, then slice across the grain into thick ribbons.

  • Top with a coin of Anchovy-Herb Butter or spoon over the pan sauce.

  • Finish with flaky salt.

  • Rocket (arugula), parmesan, and balsamic salad

  • Charred tenderstem broccoli or green beans with garlic
